why should we use unsaturated fats instead of saturated fats in cooking

Saturated fats like desi ghee increase the cholesterol level in the blood. Their high consumption is hazardous to human health as it increases the probability of heart disease.
Unsaturated fats like vegetable oil or refined oil are highly processed fats. It helps in maintaining the proper cell function and help in lowering the bad cholesterol. They are proved to be good for heart and body. Hence, unsaturated fats are preferred over saturated fats in cooking.
