how do water help in temperature regulation in plants?

The internal temperature of the plant is regulated by water.
A lot of heat is needed to turn water into vapour (it has a high latent heat of vaporisation). Plants use the mechanism of transpiration to lose heat. Transpiration is the loss of water vapor through the leaves. This evaporation of water from leaves has a cooling effect. At high temperatures the rate of transpiration increases, while the opposite occurs at lower temperatures.
