Since some substances like salt & sugar dissolve in water so when the water is heated then it evaporates..Why the particles of sugar and salt that dissolved in water does not evaporate with water?

This depends on whether or not the water is salt water. If this is the case, the salt does not evaporate because solids don't evaporate but if you want salt to
evaporate the temprature of the water has to be higher than 200 degrees celcius, then the salt in the water can evaporate.
