It is said that in a uniform circular motion although the magnitude of velocity remains the same, there is a continuous change in direction of motion. Why does the magnitude of velocity remain the same despite the continuous change in direction of motion?

It is not mandatory that velocity should remains constant in circular motion.
What is stated for circular motion was , though magnitude of velocity remains constant ,
there is change in direction during circular motion . This gives acceleration in radial direction. 
 
Normally we are under the impression , when magnitude of velocity remains same , there wil not be acceleration or retardation.
 
Thiis is true only in linear motion , i.e., motion along straight line.
 
In Circular motion, even if magnitude of velocity remains constant , change in direction gives radial acceleration.
 
If the magnitude of velocity changes in circular motion , we get tangential acceleration in addition to radial acceleration
