Baking soda -- NaHCO3 is a base so when its added the pH shifts to alkaline.
When the milk boils it should not get curdled
When curd is formed its acidic due to the formation of lactic acid, when alkali is already added it takes longer for the pH change from a slightly alkaline to acidic.
