Why vacuum pump is inserted in the final collecting beaker and not in the first flask (in which the two liquids are present initially) in distillation under reduced pressure process?

Some compounds have very high boiling points. In this case, vacuum can be used to lower the boiling point instead of increasing the temperature. Once the pressure is lowered to the vapor pressure of the compound, the distillation process can start.
