Is bile responsible for the alkaline medium of food in the small intestine or is it because of bicarbonates? Also, what is responsible for pH 6.8 in the mouth for digestion of starch by salivary amylase?

Bile is a greenish yellow liquid secreted by the liver in the small intestine. It is alkaline and contains salts which help to emulsify the fats present in the food. It makes the acidic food coming from the stomach alkaline so that pancreatic enzymes can act on it.
Saliva present in the mouth is slightly acidic with a pH of 6.8. It contains a carbohydrate splitting enzyme called ptyalin. Chemical digestion of food begins as the salivary amylase present in ptyalin begins to break down starch molecules into maltose molecules.
