Yes, Metal + nitric acid → Metal salt +water
 
But Magnesium and manganese are the two metals that are liberating hydrogen, not form water. This happened because they initially react and form H2O, but because of the Mg and Mn metals are the strong reducing agent and hence they reduced water to form hydrogen.
hence hydrogen gas gets evolved instead of water when the nitric acid reacts with magnesium or manganese.
