A∆B=AUB/A'UB' is not true because right hand side will give us only A intersection B which is not the definition of A∆B

Instead, we have

A∆B = (A \ B) U (B \ A)

This means it has all those elements which are either in A or B but not in the thr intersection of these two sets.
