Why don't we use metals as dielectric between capacitor even though the capacitance will increase by infinity as the dielectric constant for metals is infinity ?

The function of capacitor is to store electric field. If metals are used as dielectric material between capacitor plates,
then electric field will be zero between capacitor plates. This will happen because metals are good coductors and in good
conductors electric field will be zero. Dielectric constant of material alone is not sufficient to use as capacitor filling material,
but it should withstand the electric field applied across the material. Metals as good conductors shorts the capacitor plates
and makes the electric field zero
