As per Newton's law of cooling, when the body at high temperature is cooling down on its own,
the rate of change of temeperature is proportional to the difference between the temperature of the body
and ambient temperature.
 
hence we have dT/dt = -k(T-Ta)
 
This type of rate of change of property gives exponential decay as shown in figure (3) in the question.
