Pasteurisation was invented by a French Scientist called Louis Pasteur during the nineteenth century. Pasteur discovered that heating milk to a high temperature and then quickly cooling it before bottling or packaging it could keep it fresh for longer. So, it is a process of heating milk to a temperature of 70°C for 15 to 30 seconds and then quickly cooling it down to 10ºC. This kills any microorganisms present in the milk. Pasteurisation makes sure milk is safe to drink and also helps to prolong its shelf life.
