Why is Luke warm water used with flour and sugar in making bakery products

Lukewarm water is used with flour and sugar in bakery products because:
- The warm water dissolves some of the food in the granules and warms the yeast to a temperature which is favourable to fermentation.
- It also helps to even the baking process.
