Can any colour other than red be used to protect the silver layer behind the mirror? Please explain.

A coat is used to protect the silver coating from corrosion or some chemical contact.
 
The coat is a mixture of copper and a paint. This gives the red colour to the coat.
 
There is no specific reason for the coat to be red in colour.
