Till the 1870s meat was an expensive luxury beyond the reach of European poor because:

Animals were shipped alive from America to Europe. They took a lot of ship space. They were then slaughtered in Europe.

Many animals died, fell ill or became unfit for consumption during long journey.

High shipping cost led to high meat price and subsequently resulting in low demand and low production of meat. High shipping cost resulted in high meat price which only the rich could afford.
