fresh milk has ph6 .how will the ph change when it is converted to curd? what should be done to increase the ph of milk? why does the milk take a long time to set as curd?

As time passes lactobacillus bacterium attacks to milk when it has remained unboiled or unfroze and convert it into curd having pH between 4.5 and 5.5.

To increase the pH of milk we may add water to it.

Milk takes a long time to set as curd because lactobacillus bacterium slowly attacks to milk.
