Carboxylic acid are organic acids and mineral acids are inorganic acids.
Carboxylic acids on dissolution in water dissociate partially while mineral acids get dissolved in water completely.
On dissolution in water, carboxylic acid dissociate to produce carboxylate ions while mineral acids produce hydrogen ions.
