When cut pieces of beetroot are boiled in water turns red but when the pieces of carrot are boiled, the water remains colourless. Please explain.

It is due to presence of anthocyanin in beet roots, which is a water soluble pigment . Carrots have carotene which does not dissolve in water and therefore, water remains colourless.
