why is it that molecules of many elements such as helium are made up of only one atom? how? can the atoms of metals exist independently? if yes, how?

Helium and some other elements like these are stable already since their octate are complete.Molecules of metals and some other elements such as carbon, do not have a simple structure but consist of a very large and indefinite number of atoms bonded together.
