When we talk about factors affecting the discharge of ions we consider the concentration of the electrolyte as one of the factors.during electrolysis of Concentrated NaCl, the concentration of Na ions is more than the concentration of Hydrogen ions. But hydrogen ions are discharged at the cathode. why not Na ions?

In electrolysis of aqueous copper sulphate using copper electrode we see that elctrons from copper anode gets transferred to copper cathode.So can we use any other electrolyte instead of CuSO4?Since we can't see any special use of CuSO4.Explain the reason.
