Does the temperature remains constant during collision if yes why?.

Answer:
In elastic collision, no fraction of mechanical energy is stored with the particles undergoing collision.
Hence there is no change in temperature
 
But in inelastic collision part of mechanical energy is stored with the particle undergoing collision.
This stored energy either deforms the shape or increases the internal energy
hence there may be temperature increase in case of inellastic collision
