Covalent compounds are insoluble in water but soluble in organic solvents. But ethanoic acid and ethanol are soluble in water in all proportions. Why?

Covalent compounds do not dissociate in water so remain insoluble in water but are soluble in organic solvents.

 On the other hand  ethanoic acid and ethanol are soluble in water because  of its acidic character and polar nature.
