Evaporation is a surface phenomenon so larger the surface area provides greater opportunity for the molecules to escape.

Hence the evaporation of a liquid increases with an increase in the surface area.

When tea is poured in a saucer, it cools faster.

The particles of tea on the surface absorb the heat of vaporisation from the remaining particles of the tea and evaporate.

The tea thus loses heat and cools faster.
