Why ammonia and ammonium  salts do not occur as minerals and how does their solubility  in water affects this phenomenon

Ammonia and ammonium salts or compounds being highly soluble in water, do not occure as minerals.
As we know salts are ionic compounds and water is a polar covalent compounds so the water molecule pull apart the ammonium chloride lattice as a result of dipole dipole interactions of the charged ions in the lattice in the reaction called hydration NH4Cl dissolves to yield [NH4]+ and [Cl]- ions. 
The dissociation of NH4Cl in water is as follows:
NH4Cl(s) → NH4+ (aq) + Cl-(aq)
