A bacterium on salted meat or candid fruit loses water due to osmosis.Osmosis is movement of solvent molecule from higher solvent concentration to lower solvent concentration or in other words we can say that movement of solvent molecule from lower solute concentration to higher concentration through semi-permeable membrane.
Bacterium cell membrane acts as semi permeable membrane and inside bacteria the water concentration is high while outside salt or candid fruit solution has lower water concentration so water moves from bacterium to salt or candid solution.
