Fermentation is done by yeast and some kinds of bacteria. For example, bacteria such as Lactobaccilus, Streptococcus are responsible for fermentation of milk, pickles etc. Similarly yeasts such as Saccharomyces cerevisiae is responsible for the alcohol fermentation of wines and vinegar.
