What is "high dielectric constant" of water ?

Dielectric constant of water is 80 (at 20 deg C)
Water has a very high dielectric constant that allows salts to dissolve in water with dissociation.
Coordination of water molecules around the anion and the cation greatly reduces the ion-ion attraction in the salt.
Hence, water is often called the universal solvent. It dissolves polar compounds through dipole-dipole interactions.
