What determines the strength of acids and bases?

The strength of acids and bases depends on the number of H3O+ ions and OH- ions produced, respectively.
Acids that produce more H3O+ ions are said to be strong acids and that produce less H3O+ ions are said to be weak acids.
Bases that produce more OH- are said to be strong bases and that produce less OH- are said to be weak bases.
