My question is about the reverse bias graph. In reverse bias graph the current is plotted along negative direction. But current can't be negative so how is it plotted like that. Also in zener diode, how the electrons are stripped off and from which side, p-side or n-side.

When a diode is connected in reverse bias, the reverse bias graph is obtained. In this the negative terminal of the diode is connected to the positive terminal of the source.
So, when the current flows through the diode, it will flow from negative terminal to the positive terminal of the diode.
This indicates the negative direction of current and not the value. So, the current is with positive value but with negative direction. Hence, it is plotted along negative axis.
 
When the reverse voltage applied to the zener diode is increased, the electric field causes the electrons to accelerate and collide with other electrons. This causes the diode to breakdown and the electrons are stripped from the diode. The electrons will be stripped from the n-side of the diode as n-side is negative charge carrier.
