Pepsin is the proteolytic enzyme of gastric juice. It acts with the help of HCl and converts all digestible proteins up to the peptone stage.
The concept is that fatty acids, peptones, proteoses, and HCl initiate the secretion of cholecystokinin (CCK) but it cannot be said that HCl does not have much role in production of secretin but the fact is that secretin is in the inactive form, prosecretin which upon mixture with intestinal luminal contents below pH 5 converts into active secretin with the reagent HCl.
Fatty acid stimulation of bicarbonate secretion occurs at a neutral or alkaline pH and fatty acids do not interact with acid to potentiate bicarbonate secretion.
