Calorimetry is based on the principle of conservation of thermal energy. If two substances of diffrenet thermal energy are in physical contact with each other, then an equilibrium state will be reached so as substance with high thermal energy transfer heat to other substance of lower thermal energy so as to reach a common temperature.

By conservation, we have
Heat energy lost by a substance = heat energy gained by other substance.

Loss/Gain of heat energy = mass of the substance×Specific heat of that substance×Change in temperature

If we consider specicfic heat is material dependent and it is known for the substances we are interested, then we have 5 variables like mass of substances(2), initial temperature of substances (2) and final temperature (1) of the substances. while solving poroblems we will be given values of 4 variables out of these 5 variables. Using the given 4 variables, we can solve the conservation of energy equation to get unknown value of the remaining variable.
