Sucrose is called invert sugar.

Sucrose on hydrolysis gives equal amounts of glucose and fructose.

The hydrolysis can be induced simply by heating an aqueous solution of sucrose, but more commonly, catalysts are added to accelerate the conversion.

Sucrose is dextrorotatory but on hydrolysis it gives dextrorotatory glucose and laevorotatory fructose. Rotation of fructose is more than glucose so net rotation is laevorotatory. Since the product obtained totally inverse the optical activity of reactant sucrose is known as invert sugar. The overall process is called inversion of sugar.
