How is cheese manufactured?

Manufacture of cheese:

1. The first step involved in the production of cheese is the curdling of milk by lactic acid bacteria, Lactobacillus. This changes the pH of milk.

2. Coagulation is the next step in cheese production. An enzyme, called rennin, is added to encourage the process of solidification of milk.

3. The curd produced is separated from whey. It is then processed to remove moisture. Soft cheese is made by removing the liquid to drain from the curd, while hard cheese is made by compressing curd.

The cheese is then salted and ripened with a variety of micro-organisms to obtain different flavours. Common salt is added as a preservative and to increase the flavour.
