how does salt prevent fish from decaying?

Hi Anagha, 

Salt is used as a preservative because, it has the ability to draw out water from the cells by the process of osmosis; As a result of this the fish becomes dry and the environment becomes unfavourable for the growth of harmful microorganisms, thus preventing it from decay.
