Describe the various stages in which cocoa beans are processed to make bitter chocolate?

- Cocoa beans are stored in silos or warehouses in their original sacks. Imported raw cocoa is subject to strict quality control. Laboratory technicians ensure that the beans are healthy, perfectly fermented and dried, and have suffered no damage during transport.
- The process of making chocolate starts with the cocoa beans being passed through a machine that removes dried cocoa pulp and other materials.
- Beans are then roasted to bring out the aroma in large rotary cylinders.
- The cocoa beans are then cooled quickly and their thin shells are removed. The nibs, which contain about 53 % cocoa butter are used for making cocoa paste.
- Then, non-fat milk, flavors, sugar and other ingredients are added to make chocolate.
