1. Amino acids are considered to be the building blocks of proteins. It consists of a basic amino group (−NH2), an acidic carboxyl group (−COOH), and an organic R group (or side chain) that is unique to each amino acid.
2. Emulsification of fat is the breakdown of large fat globules into smaller, uniformly distributed particles. It is accomplished mainly by bile salts in the small intestine. Emulsification is the first preparation of fat for chemical digestion by specific enzymes.
