Lipase is an enzyme that breaks down fats in food to be absorbed in the intestines. It is produced in the pancreas, mouth, and stomach. Lipase breaks down triglycerides into free fatty acids and glycerol. These simpler forms are easier for the body to absorb and transport. Lipase works with bile, produced by the liver, to break down fat.
