  • All metals are excellent heat and electrical conductors. This allows the heat to travel through them readily. 
  • Copper is a great conductor of heat, which distributes evenly throughout the pan and prevents hot spots. This helps food cook faster and prevents it from sticking or burning. 
  • Steel utensils sometimes have a copper bottom to take advantage of copper's heat conductivity, which helps heat the pan faster and distribute heat evenly. Stainless steel is durable, easy to clean, and does not react with food. 
  • Hence, cooking utensils are generally made of copper or steel.
