"why the covalent compounds are "insoluble" in water?

The first part of your question is not clear
Covalent compounds aren't usually very soluble in water. Covalent molecules can not dissociate into ions therefore it does not dissolve in water.
 
There is a saying Like dissolves Like . This generally means that
Nonpolar compounds dissolve nonpolar compounds
Polar compounds dissolve polar compounds
