Why do our skin turn orange when come in contact with conc. nitric acid?

The yellow stains on skin caused by nitric acid upon reaction with proteins on the skin are the result of the xanthoprotein reaction. If you put a neutralizer on it, it will then turn the skin orange. The protein comes from eating fruits and vegetables that are orange and red in colour.
