Why do HCl, HNO3, etc., show acidic characters in aqueous solutions while solutions of compounds like alcohol and glucose do not show acidic character?

HCl and and HNO3 show acidic behaviour in aq solution as they dissosciate in water to produce Hydrogen ions while solution of glucose and alcohol do not form ions in water.
