i) it should be free from impurities

ii) it should remain firm at growth temperatures for the organisms.

iii) It should not forms clumps on solidification.

iv) It should dissolve completely in water on heating.

v) In addition, it should possess good clarity, controlled gelation and melting temperature, absence of toxic bacterial inhibitors and relative absence of metabolically useful minerals and compounds.

vi) It should be resistant to a breakdown by bacterial enzymes.

vii) It should melt at a higher temperature from that at which it solidifies,a property known as hysteresis.

viii) It should possess good diffusion characteristics
