Malt is a cereal grain, usually barley which has been allowed to germinate by soaking in water and then kiln-dried. The malting process converts the stored starch, especially the insoluble starch into soluble compounds such as the sugar maltose. Malt extract is sugars and carbohydrates which have been obtained from processing malt. Here most or all of the water is removed. Malt is used especially in brewing and distilling.
