Dear student
The difference of a quantity from some fixed value, is called deviation.
In statistics while computing arithmetic mean by short cut method we take the deviation of all the observations from the assumed mean.
It is for simplifying the calculations
Also sum of the deviations of all observations from the mean is always zero.
