The metre is defined as the distance travelled by light in 1/299729458 second. Why didn't people choose some easier number such as 1/300000000 second ? Why not 1 second ?

Because speed of  light  is a constant quantity and it remains unchanged wrt any other frame of reference.
Exact speed of light is 299729458m/s.You can take it as 300000000m/s but the measure will not be accurate.
