Saturated hydrocarbons are the ones with single bonds between carbon atoms. If one of the carbon atoms in a compound has double bond with atom of other element like oxygen, then is the compound unsaturated?

No, it will still be saturated acid. 
Compounds of carbon and hydrogen that contain one double covalent bond between carbon atoms (carbon=carbon) or a triple covalent bond between carbon atoms () are called unsaturated hydrocarbons.
