When food items which contain fats and oils are exposed to oxygen or air, fats and oils are oxidized. Due to this their smell and colour changes and food becomes stale. This is called rancidity.

Rancidity can be prevented by:

  1. By adding antioxidants to foods.
  2. Keeping the food in air tight containers.
  3. Keeping the food in refrigerators or deep freezers.
  4. Flushing food containers with nitrogen.
