Conservation of Matter: Matter can neither be created nor destroyed. Only converted from one form to another.
 
  1. Whenever you take out minerals from Earth, it still remains on the Earth, thereby contributing to Earth's mass. So , terrestrial activities have absolutely no impact on earth's mass.
  2. Sun evaporates the water, but there are rains also, that return the water to Earth. It is a cycle.

Hence, Earth's mass are not affected by the activities that you have mentioned.
