Yes Ions are more stable than the atom they came from because they have a full outer shell (valence shell). There are cations (atoms that lose 1 or more electrons to have a full outer shell) and anions (atoms that gain 1 or more electrons to have a full outer shell). Usually atoms are reactive with one another, either wanting to gain or lose electrons
