Fermentation is the process by which certain yeasts decompose sugars in the absence of oxygen to form alcohol and carbon dioxide. This method is used for production of ethanol.
One glucose molecule (a sugar) is converted into two ethanol molecules and two carbon dioxide molecules:
C6H12O6 → 2C2H5OH + 2CO2
